Sunshine Salad

Great for a brunch!

1 can pineapple tidbits (20 oz)
1 can mandarin oranges (11 oz)
1 pkg instant lemon pudding (3.4 oz)
1 c quartered strawberries
2 medium bananas

Drain pineapple and oranges, reserving the liquid. In a large bowl, combine lemon pudding mix and reserved liquid from the fruit mixing well. Fold in pineapple, oranges and strawberries. Chill at least 2 hours. Slice and mix in bananas just before serving.

Spinach Queso Dip

Perfect for a Super Bowl party.

2 jars Pace Con Queso dip
16 oz reduced fat or fat free sour cream
1 c Hellmans Light mayo
1 pkg Knorr's Vegetable Soup mix (not Spring Vegetable)
1 10-oz package frozen chopped spinach

Thaw and squeeze water from the spinach. Mix all ingredients together and bake at 350 until bubbly. Serve with Tostitos or pita chips.

Pumpkin Cake

1 moist yellow cake mix
1 c pumpkin
1 c water
3 eggs
1 tsp cinnamon
1 tsp nutmeg
1 tps ginger

Mix all ingredients together. Bake at 350 in a greased bundt pan for about 45 minutes. When cool, remove from pan and drizzle with canned cream cheese icing or powdered sugar.

Mom's Lasagna

One of my mom's best recipes. A great dish to take a new mom.

10 oz lasagna noodles
1 lb mozzerella cheese

Sauce:
1 lb ground beef or sausage, browned and drained
1 clove garlic, minced
1 tbs basil
1 tsp oregano
3/4 tsp salt
1/2 tsp thyme
2 15-oz cans of no salt added tomato sauce
2 6-oz cans of tomato paste

Filling:
3 c cottage cheese
1/2 c grated parmesan cheese
2 tbs parsley
2 beaten eggs
1 tsp salt
1/2 tsp black pepper

Cook, drain and separate lasagna noodles. In a greased 9x13 dish, layer noodles, filling, sauce and mozzerella. Repeat layers. Bake at 375 for 30 minutes.
